Tasters Table - Pumpkin Recipes

1 - Chocolate Chip Pumpkin Bread
3 cups flour
2 tsp. cinnamon
1 tsp. salt
1 tsp. baking soda
4 eggs
2 cups sugar
2 cups canned pumpkin
1 1/4 cups vegetable oil
1 1/2 cups semisweet chocolate chips


In a large bowl, combine flour, cinnamon, salt and baking soda.  In another bowl, beat eggs, sugar, pumpkin and oil.  Stir into dry ingredients just until moistened.  Fold in chocolate chips.  Pour into 2 large greased loaf pans or 5 small greased loaf pans.  Bake at 350 degrees - large loafs for 60-70 minutes and small loafs for 45-50 minutes or until toothpick inserted near the center comes out clean.  Cool for 10 minutes before removing from pan to wire racks.







2 - Dinner in a Pumpkin

1 medium pumpkin

  • onion, chopped
  • 2 tablespoons vegetable oil
  • 2 lbs ground beef
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 (4 ounce) can sliced mushrooms
  • 1 (15 ounce) can cream of chicken soup



  • 1 1/2 cups cooked rice
    1 (8 ounce) can sliced water chestnuts



Directions

Cut off the top of the pumpkin and thoroughly clean out pulp and seeds.  Preheat oven to 350°F (175°C) In a large skillet sauté onions in vegetable oil until tender.  Add meat and brown.  Drain drippings from skillet.  Add soy sauce, mushrooms,brown sugar and soup.  Simmer 10 minutes, stirring occasionally.  Add cooked rice and water chestnuts.   Spoon mixture into cleaned pumpkin shell.  Replace pumpkin top and place entire pumpkin, with filling, on a baking sheet.  Bake 1 hour or until inside meat of the pumpkin is tender.  Put pumpkin on a plate.  Remove pumpkin lid and serve meat.  For your vegetable, scoop out pumpkin and serve.




3 - Pumpkin Bars


4 eggs
1 16 ounce can of pumpkin
1 cup oil
Beat Together


Sift and add
2 cups flour
2 tsp. baking powder
2 tsp. cinnamon
1 tsp. salt
1 tsp. soda


Mix thoroughly.  Spread on 15x10x2 cookie sheet.  Bake at 350 for 25-30 minutes, until toothpick comes out clean.


Frosting:
3 ounces cream cheese
1/2 cup soft margarine
1 tsp. vanilla
2 cups powdered sugar
